SYN FREE 'SMASH' PIZZA -

BASE - 1 X SMARTPRICE MASH (20P), 250ML WATER, TSP SALT
SAUCE - FEW TBSP PASATTA, GARLIC AND MIXED HERBS
TOPPINGS - HAM/CHICKEN/BEEF AND VEGGIES AND 42G LF CHEDDAR

MIX THE MASH POWDER WITH THE SALT AND WATER AND MOULD TO A DOUGH. FLATTEN OUT INTO CIRCLES ABOUT 3/4CM-1CM THICK. LINE A BAKING TRY WITH GREASEPROOF AND SPRAY WITH FRYLITE AND PUT THE MASH CICLES ON. COOK FOR 15 MINS EACH SIDE AT ABOUT 190O. THEN ADD SAUCE, TOPPINGS AND CHEESE AND COOK FOR UNTIL THEY LOOK DONE.

I HAD SOME LEFT OVER MASH MIX, I MADE THESE 6 PIZZA USING A MUG AS A CUTTER AND I WAS FULL AFTER 4, HAD TO HAVE THE OTHER 2 LATER ON AND THEY ARE JUST AS NICE COLD :)



BAKED BEAN PIZZA:

SERVES 3-4, 3-4 SYNS A PORTION

400G SWEET POTOTOES PEELED
1 400G TIN CHICK PEAS DRAINED
2 LARGE HANDFULS SPINACH
1 LARGE ONION FINELY CHOPPED
1 RED CHILLI FINELY CHOPPED
2 CLOVES GARLIC CRUSHED
1 VEG OXO CUBE MADE UP 1PT BOILING WATER
2 LEVEL TBSP COCONUT MILK POWDER
2 TSP CURRY POWDER
250G FAT FREE FROMAGE FRAIS
2 LEVEL TSP CORN FLOUR
ONE CAL SPRAY

METHOD
HEAT PAN AND SOFTEN ONIONS AND CHILLI FOR 2-3 MINS TURN DOWN HEAT AND ADD CRUSHED GARLIC AND CURRY POWDER.
CHOP SWEET POTATO INTO BITE SIZE PIECES ADD TO ONION MIX STIR THROUGH, DISSOLVE COCONUT POWDER IN STOCK, POUR OVER POTATO MIX AND COOK FOR 15 MINS ENOUGH FOR POTOTOES TO COOK.
THE LIQUID SHOULD HAVE REDUCED BY TWO THIRDS STIR IN CHICK PEAS AND SIMMER FOR 5 MINUTES
BRING UP TO BOIL AND THICKEN WITH CORNFLOUR (MIXED WITH 2TBSP COLD WATER) ADD SPINACH COOK UNTIL SPINACH HAS WILTED 2-3 MINUTES.
TURN OFF THE HEAT AND STIR IN FROMAGE FRAIS.
SERVE WITH BASMATI RICE.

2X TINS BAKED BEANS, 1 TIN CHOPPED TOMS (BUT I USED 6 TBS OF PASATTA AS I HAD SOME IN THE FRIDGE,1 PEPPER,1 RED ONION,I ALSO ADDED COURGETTE AND MUSHROOMS AS WELL JUST TO BULK IT OUT,1 CLOVE GARLIC,1 TBSP WORCESTERSHIRE SAUCE AND 1 TBS SOY SAUCE AND 1 TSP PAPRIKA

FRY OINIONS PEPPERS COURGETTES AND MUSHROOMS WITH FRYLIGHT UNTIL SOFT, THEN ADD ALL WET STUFF, LAYER IN A DISH LIKE YOU WOULD NORMAL LASAGNE, (COULD ALSO ADD COTTAGE CHEESE TO THIS) THEN COVER WITH FOIL BAKE IN OVEN FOR 20 MINS ON 180-200, THEN UNCOVER AND ADD CHEESE (HEALTHY EXTRA) AND COOK UNTIL MELTED AND GOLDEN

COOK THE LENTILS IN THE WATER UNTIL SOFT, AND ALL THE LIQUID HAS BEEN ABSORBED. CHOP THE ONION, AND FRY IN FRY LIGHT UNTIL SOFT. COMBINE ALL THE INGREDIENTS AND PRESS INTO A 9" SANDWICH TIN LINED WITH BAKING PARCHMENT. BAKE AT 190OC/GAS 5/375OF FOR 30 MINUTES. SERVE HOT OR COLD. CUT INTO 8 WEDGES. 2 HUGE WEDGES WOULD BE USING YOUR HEA. VERY SAVOURY,SCRUMMY AND VERY FILLING!!!!

ONCE COOKED ADD CAN OF DIET ORANGE (DIET LILT WOULD PROBABLY WORK WELL TOO), ADD THE TOMATOES, FRESH PINEAPPLE, CRUSHED GARLIC AND THE SALT, MIXED SPICE AND GINGER. COOK ON HIGH FOR ABOUT 10-15 MINS AND REMOVE FROM HEAT AS SOON AS THE SAUCE THICKENS. I ALSO CUT SOME FRESH PINEAPPLE AND ADDED THAT AFTER THE SAUCE WAS COOKED SO IT DIDN'T COOK AND ADD SYNS. YUM YUM YUM.

FIRST SW DESSERT IVE MADE AND IT WAS SOOOO NICE (2 SYNS +HEB) ITS 2 DOUBLE CHOCOLATE ALPEN LIGHT BARS MELTED, RASPBERRIES, AND FF FROMAGE FRAIS MIXED WITH A WHITE CHOC OPTIONS AND A BIT OF SPLENDA AND THEN LAYERED UP. I INTENDED TO USE QUARK BUT ASDA WAS SOLD OUT WHEN I WENT.

I USED 5 EGGS IT MADE 4, SPLIT THE YOLK FROM WHITES, WHISK THE WHITES UNTILL STIFF, I THEN STIRRED IN ABOUT 6 -8 TEASPOONS OF SWEETNER DEPENDS ON YOUR TASTE I GUESS, THEN I ADDED 6 DROPS OF VANILLA TO THE YOLKS, THEN FOLDED THAT INTO THE WHITE MIXTURE, I ALSO ADDED A SPRINKLE OF CINNAMON :) HOPE THAT MAKES SENSE HA. METHOD:
SEPERATE EGG WHITES FROM YOLKS AND WHISK WHITES UNTIL SOFT PEAKS FORM.
IN ANOTHER BOWL PUT THE YOLKS, HALF OF THE TUB OF QUARK,2 TBLSP CANDEREL,FEW DROPS VANILLA ESSENCE,BAKING POWDER.
WHEN PEAKS FORM FOLD IN THE ABOVE INGREDIENTS THEN ONTO A GREASED TRAY LINE WITH GREASEPROOF PAPER AND ADD THE CAKE MIXTURE, PUT IN OVEN FOR 10/15 MINS UNTIL GOLDEN BROWN I DID GAS MARK 5/6.
WITH THE OTHER HALF OF THE QUARK THE REMAINING CANDEREL AND STRAWBERRIES OR RASP, ADD SUM MORE ESSENCE TO TASTE MIX IT ALL UP.
WHEN THE CAKE IS BROWNED LEAVE TO COOL TURN OUT ONTO A SURFCE TAKING THE PAPER OFF, ADD THE QUARK MIXTURE AND ROLL UP INTO A SWISS ROLL ADD ICING SUGAR IF WANTED!
PLACE INTO FRIDGE TO SET FOR 1 HR AND YUMMY IT TASTES GUD FOR 1/2 SYN ALL THE LOT!! ENJOY

LEMON & LIME FILLING

2 SYNS TOTAL FOR THE WHOLE ROULADE

4 EGGS
1 TSP BAKING POWDER (1/2 SYN)
1 TUB FAT FREE FROMAGE FRAIS
1 TUB QUARK
1 SACHET SUGAR FREE LEMON/LIME JELLY CRYSTALS (1 ½ SYNS)
4 TABLESPOONS OF CANDEREL + MORE FOR ICING
1 FRESH LEMON

PREHEAT OVEN TO 190O
MAKE THE JELLY USING ¼ PINT OF BOILING WATER THEN WHISK IN THE TUB OF FROMAGE FRAIS, PUT IN FRIDGE TO SET SLIGHTLY (NEEDS TO BE SPREADABLE)
SEPARATE THE EGGS. WHISK EGG WHITES TILL THEY FORM PEAKS, SET ASIDE. MIX EGG YOLKS WITH ½ A TUB OF QUARK, THE BAKING POWDER, CANDERELL, GRATED RIND OF THE LEMON AND A SQUEEZE OF IT’S JUICE. FOLD THIS MIXTURE INTO THE EGG WHITES. POUR INTO A LINED AND SPRAYED WITH FRYLIGHT SWISS ROLL TIN AND COOK FOR APPROX. 10 MINS TILL GOLDEN. TURN OUT AND REMOVE PAPER.
WHEN COLD, SPREAD THE JELLY MIXTURE ONTO THE SPONGE, AND ROLL UP. MIX THE REMAINING QUARK WITH LEMON JUICE, AND CANDERELL TO TASTE. SPREAD ON TOP OF ROULADE AND DECORATE WITH SOME LEMON PEEL SHAVINGS.

YOU NEED:
1 PACKET OF MR MASH OR ASDA SMART PRICE INSTANT MASHED POTATO( BOTH SYN FREE)
FRYLIGHT
1 CAKE TIN
HERBS OF YOUR CHOICE; BASIL/PARSLEY/CORIANDER
42G OF LOW FAT CHEESE OR 57G OF LOW FAT MOZZARELLA (USE AS HEALTHY EXTRA A OR 6 SYNS)
1 GARLIC CLOVE,CRUSHED

1.MAKE UP THE MASH WITH COLD WATER ACCORDING TO PACKET INSTRUCTIONS.I USE 300MLS OF COLD WATER TO SAVE WAITING FOR IT TO COOL. THE MIXTURE NEEDS TO BE A VERY DOUGHY CONSISTENCY, YOU SHOULD BE ABLE TO SQUASH IT INTO A BALL.

2.SPRAY THE CAKE TIN WITH FRYLIGHT THEN PRESS THE MASH DOWN UNTIL ITS FLAT AND COVERS THE TIN.
3.PLACE IN THE OVEN ON GAS MARK 7 AND COOK UNTIL JUST TURNING GOLDEN BROWN, THEN TURN OVER AND SPRINKLE HERBS AND RUB CRUSHED GARLIC OVER THE BASE AND SPRAY WITH FRYLIGHT.
4.PLACE BACK IN THE OVEN AND BROWN THE OTHER SIDE.
5. ONCE THE OTHER SIDE IS BROWN SPRINKLE 42G LOW FAT CHEESE ONTOP AND PUT BACK INTO THE OVEN UNTIL CHEESE HAS MELTED.
6.CUT INTO SECTIONS AND SERVE ♥

SMOKED HADDOCK AND POACHED EGG RISSOTO

4 X 142G/5OZ SMOKED HADDOCK FILLETS, 1.2L/2PT FISH STOCK, 1 LARGE ONION, PEELED AND FINELY CHOPPED, 255G/9OZ DRIED RISOTTO RICE, 397G.14OZ FRESH OR FROZEN PEAS, 100G/3.5OZ FRESH SPINACH LEAVES, ROUGHLY CHOPPED, 4 LARGE EGGS


PLACE THE HADDOCK IN A LARGE SAUCEPAN OF WATER AND BRING TO THE BOIL. TURN OFF THE HEAT AND ALLOW FISH TO SIT IN THE WATER, COVERED, FOR 12-15MINS. DRAIN AND SET ASIDE. BRING THE STOCK TO THE BOIL IN A LARGE PAN OVER A MEDIUM HEAT, THEN TUR...N THE HEAT DOWN AS LOW AS IT WILL GO TO KEEP THE STOCK HOT BUT WITH OUT LETTING IT REDUCE. PLACE 198ML/7FLOZ OF THE WARMED STOCK IN ANOTHER LARGE PAN ADD THE ONION AND LEEK (FORGOT TO MENTION ABOVE- 1 LARGE LEEK, WASHED AND FINELY CHOPPED) AND COOK FOR 3-4 MINS UNTIL THEY HAVE SOFTENED. ADD THE RICE AND COOK FOR 2-3MINS. STIR IN THE PEAS AND SPINACH. ADD THE HOT STOCK TO THE RICE A LADLEFUL AT A TIME AND KEEP STIRRING UNTIL EACH LADLE IS ABSORBED. KEEP ADDING THE STOCK, STIRRING AS OFTEN AS POSSIBLE UNTIL THE RICE IS AL DENTE (APPROX 20-25MINS). SKIN AND FLAKE THE HADDOCK INTO LARGE BITE SIZED PIECES AND GENTLY STIR IT INTO THE RICE. KEEP THE RISOTTO WARM WHILE YOU POACH THE EGGS. DIVIDE THE RISOTTO BETWEEN 4 PLATES, TOP EACH WITH A POACHED EGG AND SERVE IMMEDIATELY.

METHOD: PLACE INTO A BOWL HALF A TUB OF QUARK, 4 EGG YOLKS, 1 TSP BAKING POWDER AND 1/2 TSP VANILLA ESSENCE TO TASTE, MIX TOGETHER WITH ELEC WHISK & SET TO 1 SIDE. PREHEAT OVEN 180 DEG/GAS 4. INTO ANOTHER BOWL, WHISK THE EGG WHITES UNTIL TH...EY ARE STIFF AND FORM PEAKS, WHISK HALF THE EGG WHITES INTO THE MIXTURE IN THE 1ST BOWL AND WHEN COMBINED FOLD IN THE 2ND HALF OF THE EGG WHITES..........LINE SWISS ROLL TIN WITH BAKING PAPER & BAKE FOR 15/20 MINS.......ALLOW TO COOL.....WHILST COOLING, MIX THE REMAINING HALF OF TUB OF QUARK WITH THE SWEETNER AND SOME VANILLA ESSENCE TO TASTE, SPREAD OVER THE COOLED ROULADE, ADD CHOPPED FRUIT, ROLL IT UP & SCOFF THE LOT FOR ONLY HALF A SYN!!! WOOHOO, IT'S GORGEOUS!

COOK ON FAIRLY HIGH UNTIL QUORN PIECES HAVE COOKED THROUGH, THEN SIMMER UNTIL SAUCE HAS THICKENED.

METHOD

SPRINKLE THE GELATINE INTO A BOWL CONTAINING 100ML/3½FL OZ OF VERY HOT WATER AND STIR WELL UNTIL DISSOLVED. PLACE THE FROMAGE FRAIS IN A LARGE BOWL AND ADD THE HOT CHOCOLATE DRINK, MIX WELL UNTIL DISSOLVED. MIX IN THE COOLED GELATINE. WHISK THE EGG WHITES UNTIL THEY STAND IN STIFF PEAKS, AND THEN FOLD INTO THE CHOCOLATE MIXTURE. POUR INTO DISHES AND CHILL WELL UNTIL SET. * PREGNANT WOMEN, CHILDREN AND THE ELDERLY SHOULD NOT EAT RAW EGGS

I MIXED HALF A TUB OF QUARK WITH A TOFFEE MULLERLIGHT AND A LITTLE BIT OF SWEETNER, PUT ONE ALPEN LIGHT BAR IN THE BOTTOM (HEB), LAYERED UP WITH BANANA AND THE 'TOFFEE' MIXTURE AND FINISHED OFF WITH ANOTHER ALPEN LIGHT BAR - WAS VERY YUMMY AND DEF SATISFIED THE SWEET TOOTH!! :)

1 TSP CURRY POWDER
1 SMALL CHILLI
1/2 GREEN PEPPER
8 BUTTON MUSHROOMS
1 BLOCK OF FROZEN SPINACH
1 X 400G CAN OF CHOPPED TOMATOES

FOR SERVING: BASMATI RICE.



1. CHOP THE CHICKEN & DRY FRY IN A PREHEATED NON STICK PAN WITH THE ONION, GARLIC & SPINACH.

2. SPRINKLE THE CURRY POWDER OVER & COOK FOR 1 MINUTE, THEN ADD THE CHILLI, GREEN PEPPER, BUTTON MUSHROOMS & CHOPPED TOMATOES & SIMMER FOR 5 MINUTES.

3. SERVE WITH THE BASMATI RICE.
